BUFFY
DESCRIPTION
Buffy is the 3rd version of our barrel-aged American barleywine. We use different barrels each batch. Each time we brew this, we start the fermentation with American Ale yeast, then chill the beer to halt the process before it finishes. We then rack to barrels and pitch with Brettanomyces to bring it back to life. The result is a soft, complex, toasty and slightly chocolatey delight, with just a bit of alcohol warmth. The spirit character changes each time. Buffy's year-long stay in Old Forester Bourbon Barrels left a noticable whiskey character. Past iteretions of this recipe include Lazarus (Downslope Distillery Barrels) and Orpheus (Bull Run Barrels).

PAIRINGS
There's not a thing in the world wrong with enjoying Buffy all by itself, but if you want to pair it with something, keep it very simple: grab yourself a lump of Stilton or a really old cheddar and a hunk of pain au levain.
