Over 2 years in the making, Les Mains is our second barrel-aged sour beer to be released. It started as a simple American Blonde Ale, which was then transferred to a to oak barrels (a mixture of Chardonnay and neutral oak) with a blend of bacteria and wild yeast. These critters spent about 2 years working hard to produce the lactic acid so prominent in the beer. It is pretty tart, a bit funky, with a bright, slightly fruity nose.
